olive oil
5 lbs ground bison
4 onions, chopped
2 jalapenos, chopped
2 red bell peppers, chopped
2 green bell peppers, chopped
1 1/2 cups chili powder
1 cup cumin
1 can fire roasted tomatoes
1 cup water
1 gallon cooked beans
Heat olive oil in pan. Add ground bison. Brown and remove from pot. Heat more oil in pan. Add all vegetables one at a time, allowing each to saute slightly before adding the next. Mix in chili powder and cumin and saute for another two to three minutes. Add tomatoes, water and cooked bison to the pot. Reduce heat and cook on low for about 1 hour. Stir in beans. Cook for another 20 minutes. Add salt and pepper to taste.
