4 4oz. salmon steaks
1 packet of spice mix
Corn Relish:
1 large red bell pepper cut into ½ inch pieces
1 c. fresh or frozen corn kernels, thawed
¼ c. red onion, minced
2 t. lemon juice
1 T. olive oil
1 T. honey
¼ c. fresh parsley, minced
1/4 t. black pepper
1/4 t. red pepper
Preheat oven to 400° F. Sprinkle salmon steaks with spice mix. Place steaks on foil lined baking sheet and roast in oven for 10-12 minutes. While salmon is cooking, sauté onions in oil over medium-high heat. Add peppers and cook 1 minute. Add corn and turn heat to medium. Cook 2 minutes. Remove from heat add juice, honey, black pepper, red pepper and parsley. Mix well. Serve with salmon.

1 t. oregano
1 t. dry mustard
1 t. onion powder
1 t. garlic powder
1 t. basil
1 t. paprika
1 ½ t. celery seed
1 t. thyme
1 t. dill weed
1 t. coriander seed
1 t. rosemary
½ t. cayenne pepper
½ t. ground ginger
½ t. cumin
Combine all ingredients. Store in airtight container or make an envelope from a 6 inch square of aluminum foil.
